Paper vs steel filter
Paper filters absorb more of the coffee oils than a steel filter, which strips out some of the heavier flavour compounds. The result is a cleaner, lighter cup with more origin clarity. Suits single origins well.
Best coffee with a paper filter
Single origins. The clean filtration brings out the origin character. Brazil Daterra for chocolate and nut, or Honduras SHG for hazelnut and caramel.
